Mole Cake is my son's favored cake. I have to make it on his birthdays or whenever he has the desire for..
This cake is perfect for any occasion, especially, for beginner in baking. The creativity lies in yourself after you have created the mole hill.
Here the recipe:
I have changed the recipe ingredients for user who have problems
with their sugar or chronically ill e.g Fibromyalgia...
With the first 7 ingredients you make the dough:
100g Vegan butter
120g Coconut Sugar
75g Buckwheat flour
75g All-Purpose Spelt flour (the white one..the darker one is to rich)
30g Cocoa
1Tbsp. Backingpowder
2 Eggs
Add the dough in a form which is greased and bake it by 340F/170 Degree - 30 min.
After that you need to cool it on a rake.
In the meanwhile...
Filling:
3 Bananas
60 g Chocolate sprinkles (if you do not have it..do not worry..)
2 cups of heavy cream
1 - 2 tsp of cream of tart/stabilizer for the heavy cream
Once the baked pastry case is cooled off you leave about 1/2 cm/0.20inc from the rim and cave the inside of the case. Be careful that you not cave to deep otherwise you will have a hole.
Use a TBspoon. The crumbs move to a bowl and coarse them. DO NOT DISCHARGED them you need them!
Fill the bottom with your favored jam and fruits. I used homemade blueberry jam and bananas. Cut the bananas in slices and place them on the jam. Fill the hole up with your whip-cream and form a hill. With you coarse crumbs deco your whip cream to make it look like a Mole Hill.
If you love to add your special creativity on the Mole Hill you could add a little mole out of marzipan or whatever comes into your mind.
